Hey guys! I just realised that it’s been about a month since I last wrote up a “Things I’m Loving” post… oops! Life has been busy, and full of enjoying some amazing family moments, training, work, time with friends etc. For that I’m really not sorry 🙂 Things are going really well here in Casa de Smith and we’ve had a fantastic summer this far. Sadly there’s only 3 weeks left until the summer ends and the girls go back to school and fall sports starts (gymnastics, hockey, swimming etc). It’s these small moments when I step back to reflect on our lives that makes me realize how good I truly have it, even if I don’t always eat as healthy as I had hoped or worked out as hard as I had wanted.
My training *knock on wood* has been great lately. A good friend of mine let me borrow her road bike and I’ve gotten in some great training rides. As well, I’ve somehow managed to build up a small community of like-minded women to train with – some who are even crazy enough to do open water swims with me! So this week, the thing I’m loving is my friends, who motivate and encourage me.
This is a work in progress for me. Always. But stocking up my cupboards and fridge with nice healthy REAL food is helping, except for when we eat it all…. The other night I couldn’t find anything healthy to eat as a meal, so I climbed up on the counter and dug around my cupboards to see if there was ANYTHING at all I could use to make a decent meal. This is major progress for me because previously I would just pick up the phone and order a pizza.
When I started looking around I found:
Quinoa, tuna, onions, parmesan cheese, and cream of chicken soup.
So I turned it into a Quinoa/Tuna casserole:
It was delicious and the rest of my family loved it too – score! Sierra (my oldest) even asked for a serving for her lunch at camp the next day!
I recently discovered grocery gateway, so I’ve placed an order for the food we typically run out of mid-week to be delivered to us on Wednesday night:
It’ll be interesting to see if it arrives on time, exactly as I had ordered, etc.
